Tasty and Quick Side Dish You'll Love

ParsleyOn Sunday night I made a delicious side dish. I was originally going to follow a recipe that I had found online, but then decided to start from scratch and make what I would hope to be a delicious and healthy couscous side dish. Of course I had to include fresh herbs (I have 2 pots on my back steps overflowing with fresh herbs that I planted) - as they add wonderful flavor and aroma to dinner dishes. Orange Couscous with Almonds by Brenda
(serves 4-6)
1 Cup Whole Wheat Couscous
1/2 Cup Orange Juice
1 Cup Water
1 Tbl. Butter
Dash of Salt
1/4 Cup Sliced Almonds
Large Handful of Fresh Parsley, chopped

Toast almonds in small saucepan on medium heat. Make sure to keep an eye on them as you slowly stir them. Once they start toasting, they go quickly and can become burnt very easily.

Once almonds are toasted, transfer them to a small bowl. In the same saucepan, bring orange juice and water to a boil. Once boiling, turn off heat. Add couscous, parsley, butter, and salt - stirring together - then let stand for 5 minutes. (couscous is so fast and easy to make - I love it) Fluff couscous with fork and toss with toasted almonds. It's ready to serve. This dish is perfect for you and your sweetie, or even when having guests over for dinner. Enjoy!

Cupcakes and Weddings

CupcakesToday I stumbled upon a blog that talked about cupcakes and it got me thinking about how brides lately are forgoing the traditional wedding cake for a tiered cupcake tree at their reception. I found some great sites that offer cupcakes for weddings and thought you might like to check them out. I've also realized that there seems to be an emergence of Cupcake Bakeries - too bad there isn't one located near me. They make perfect birthday desserts and hostess gifts without you having to do the baking (although I certainly don't mind baking/cooking).

Saw the movie Monster-In-Law

The other evening I went with my husband to see the movie Monster-In-Law at our local village theater (starring Jennifer Lopez and Jane Fonda). I have to say, I really liked the movie. But, then again, I do like fluff wedding related movies :) I have watched The Wedding Planner with JLo 3 times. While parts of Monster-In-Law were at times stupid, it was a fun movie overall. And Wanda Sykes (who plays the assistant to Jane's character Viola) will have you continuously laughing.
