I received an email yesterday from Lali, owner of Nana Pearl's Wooden Spoon in NYC (she was listed as a resource for Organic Wedding Cakes in my blog post from last week) - I found her comment very interesting and wanted to share it with you: "As a side note, vegan cakes were added to the website at the same time as organic cakes. To my surprise, I have had much more interest in vegan wedding cakes than organic wedding cakes. Individuals who request additional information on the website specifically express interest in vegan cakes about five times more often than individuals who specifically request information about organic cakes. It could be because so few wedding cake vendors offer vegan cakes or it could be the beginning of a new trend." Vegan means there are no animal-derived ingredients (dairy free and egg free).
